Ingredients Required for Preparing Roast Chicken

Roast Chicken

  • 1 whole chicken
  • 2 limes
  • 2 tsp. Salt
  • 1 1/2 tbsp. Seasoned salt
  • 1 tsp. Ground sage

Stuffing Required for Preparing Roast Chicken

  • 8 soda crackers
  • 4 slices bread
  • 2 tbsp. Bajan Seasoning
  • 3 tbsp. Worcestershire Sauce
  • 2 tbsp. Tomato ketchup
  • 1 tsp. Seasoned salt
  • 1/2 tsp. Hot pepper sauce
  • 1/2 tsp each thyme and basil
  • 1 tbsp. Vegetable Oil

Method For Preparing Roast Chicken

Wash and clean chicken removing any excess fat. Squeeze the lime juice onto the chicken and rub in the salt. Let stand for 10 minutes then rinse and pat dry. Rub with the seasoned salt and sage. Make sure the seasoning gets under the skin where possible.

  1. To make the stuffing….chop the giblets into small pieces and season with the Bajan Seasoning and ketchup.
  2. Soak the crackers and bread in a little water for a few minutes to soften.
  3. Heat the oil and saute the giblets in a pan for about five minutes. Pour in 2 cups water and simmer for 20 minutes. Squeeze out any excess water from the crackers and bread and add to the pan.
  4. Reduce heat and season with pepper sauce, Worcestershire sauce, seasoned salt, basil and thyme. Stir constantly to prevent sticking. Add a little water if the mixture appears too stiff. Cook for about 5 minutes to blend flavours.
  5. Place the stuffing into the cavity of the bird and close with skewers or needle and thread.
  6. Dot with butter, cover with foil and roast in a 350 degree oven for 1 hour and 15 minutes. Baste every 20 minutes.
  7. For the final 15 minutes uncover and allow meat to brown.
  8. 1 hour and 15 minutes is usually enough to cook a 3-4 pound chicken.
