Vanilla Baked Cheesecake

  • 200 gms biscuits (Good Day butter or Marie biscuits work best)
  • 100 gms butter melted

For Filling

  • 750 gms cream cheese
  • 1/2 cup castor sugar
  • 3 eggs
  • 1 tsp vanilla essence

Method For Preparing Vanilla Baked Cheesecake

Grease a 20 cm spring form tin. Crush biscuits into fine crumbs and add in melted butter. Press this crust mix firmly into tin and refrigerate till firm (at least half an hour).Beat cream cheese and sugar till smooth. Add eggs one at a time and beat well. Add vanilla and stir through.

Preheat oven to moderate heat(about 120 degrees celsius).Pour filling into crust and place tin in oven. Bake for 50 minutes or till firm.(To know how a baked cheese cake is ready, it is fairly firm at two inches from the pan edges and he middle moves slightly when the tin is shaken, but the filling should not be too liquid looking).

Cool cheesecake in oven with door ajar. Cool completely before removing the sides of a spring form pan ,then refrigerate the cheesecake for several hours before serving.
