<h3>Ingredients Required for Preparing Mutton Kabab</h3>

<li>Mutton &#8211; 1Kg boneless
<li>Onions &#8211; 4 Medium sized
<li>Garlic &#8211; 15 cloves
<li>Red chilli powder &#8211; 1/2 Tbsp
<li>Turmeric powder &#8211; 1/2 Tsp
<li>Coriander leaves &#8211; 1/2 cup
<li>Green chillies &#8211; 5
<li>Chironji flower (Charoli Flower) &#8211; 50gms
<li>Badam &#8211; 50gms
<li>Egg &#8211; 1
<li>Lemon &#8211; 1
<li>Cooking Oil
<li>Salt &#8211; As per the taste
</ul>
<h3>Method for Preparing Mutton Kabab</h3>
<ol>
<li>Slice one onion them into fine pieces and fry them in oil till they turn into golden brown color.
<li>Take another onion, and 3 green chillies and finely chop them. Take these pieces into a separate bowl and keep aside.
<li>Take a small bowl and fill it with water. Add badam and chironji flower to it and leave them.
<li>Take the mutton, clean it thoroughly and make it into small pieces.
<li>Take cooker and add mutton pieces, friend onion pieces, chopped onion pieces, garlic cloves, 75% of the Coriander leaves, chopped green chilies, salt, and turmeric powder, and cook it on medium flame.
<li>Take a frying pan and add cooking oil to it.
<li>Take the cooked mutton pieces separately and fry them in this pan.
<li>After frying them add them back to the left over mixture of cooker.
<li>Grind this mixture well with the help of a grinder.
<li>Grind soaked badam pieces, chironji flower, and egg yolk together and take the mixture into a bowl.
<li>Now chop the remaining onions, green chillies, and Coriander leaves.
<li>Take a pan and fry these onion, green chilly and Coriander leaves in it.
<li>Take a bigger bowl and add ground mutton mixture, ground badam mixture and fried onion, green chilly pieces and Coriander leaves and mix the whole mixture well.
<li>Make small balls out of these mixture and press them into shape of cutlets.
<li>Take frying pan and fry them in the pan on medium flame.
<li>Your hot delicious mutton kabab is ready to eat.

<h3>Ingredients Required for Preparing Mutton Paya</h3>

<li>Lamb legs (paya) &#8211; 4
<li>Onions &#8211; 4 Medium sized
<li>Tomatoes &#8211; 4 Medium sized
<li>Fresh grated coconut &#8211; 2 Tbsp
<li>Green Chillies &#8211; 5
<li>Red Chilli Powder &#8211; 2 Tsp
<li>Garam Masala &#8211; 1 Tsp
<li>Ginger Garlic Paste &#8211; 2 Tsp
<li>Coriander Powder(Dhania Powder) &#8211; 1 Tbsp
<li>Pepper Corns &#8211; 6 Crushed into small pieces
<li>Turmeric Powder &#8211; 1/4 Tsp
<li>Elaichi &#8211; 4
<li>Cloves &#8211; 6
<li>Cinnamon &#8211; 2 Small sticks
<li>Coriander leaves &#8211; 1 Tbsp (Finely chopped)
<li>Bay Leaf &#8211; 1
<li>Cooking Oil &#8211; 3 Tbsp
<li>Water
<li>Salt &#8211; As per the taste
</ul>
<h3>Method for Preparing Mutton Paya</h3>
<ol>
<li>Take 2 onions and chop them finely. Take these finely chopped onion pieces into a plate and keep aside.
<li>Grind the remaining 2 onions and keep this onion paste aside.
<li>Now grind coriander leaves, green chillies and coconut grating. Again take this paste into separate plate.
<li>MAke tomato puree out of the tomatoes. Keep all these pastes, onion pieces and tomato puree aside.
<li>Now take the payas, i.e leg pieces and keep them thoroughly.
<li>Place these leg pieces into cooker. Now add 1 liter water, turmeric powder and salt to it.
<li>Now close the lip of the pressure cooker and allow it for cooking up to 10 whistles.
<li>Meanwhile, take a pan, add oil to it and heat it on a medium flame.
<li>Now add Elaichi, cloves, bay leaf and cinnamon to it and stir it.
<li>Next add ginger garlic paste to it and fry it for couple of seconds.
<li>Next add the chopped onion pieces to the pan and fry them till they turn in golden brown colour.
<li>Next Onion paste to it and fry it too.
<li>Now add coriander powder, garam masala, crushed pepper pieces, and red chilli powder to it and fry it for a minute.
<li>Remove the lid of the pressure cooker and pour this complete masala in the pan into the pressure cooker.
<li>Next add the tomato puree to it and mix well.
<li>Allow it for cooking for about 2 minutes under low flame.
<li>Now add the chilli-coconut paste, and 500ml of water to it.
<li>Check the salt.
<li>Close the pressure cooker lid and cook it for another 10 whistles.
<li>Switch off the flame.
<li>Once the cooker is cool, take it into a separate bowl. Your Mutton paya is ready to get served.

<h3>Method for Preparing Mutton Chilly Fry</h3>
<ol>
<li>Wash the mutton. Add salt, turmeric powder and some ginger garlic paste to it and mix well.
<li>Keep the mixture aside for 15 minutes for marination.
<li>Meanwhile grind red chillies, garam masala, and cumin seeds together and keep aside.
<li>Take a cooking pan and add oil to it. Heat the oil and fry the finely chopped onions in it. Fry them till they turn into golden brown color.
<li>Add remaining ginger garlic paste, and grind masala, which we kept aside to the oil and fry.
<li>Now add the marinated mutton pieces, and tamarind paste to it and mix well.
<li>Fry the mixture until the pieces get cooked enough.
<li>Once they are cooked, add curry leaves and coriander leaves to it.
<li>Cook it for some more time and take it into a separate dish.
<li>Your mutton chilly fry is ready to get tasted.

<li>Bread Powder (Powdered dry bread)
<li>Masala Powder
<li>Turmeric Powder
<li>Red Chilli Powder
<li>Salt &#8211; as per taste

<h3>Method for Preparing Keema Potato Cutlets</h3>
<ol>
<li>First and foremost wash the keema and add turmeric powder, salt, masala powder, onion pieces and chilli pieces to it.
<li>Next boil this mixture by adding 2 and 1/2 glasses of water. Once the mixture is cooked, take it into a bowl and keep aside.
<li>Take a separate bowl and boil potatoes in it. Once they get boiled, peel off the skin.
<li>Now take these boiled potatoes and mix them well with the keema mixture.
<li>Take a small portion of this mixture and roll it up into the shape of a small ball. Now press this ball on both sides, so that it takes the shape of a cutlet.
<li>Make as many cutlets as you can make out the mixture.
<li>Now take another bowl and beat eggs in it.
<li>Take bread powder in a plate.
<li>Keep the prepared cutlets, bowl containing beaten egg and plate contain bread powder side by side.
<li>Take a frying pan. Add some cooking oil to it and heat.
<li>Once the oil gets heated enough, dip the cutlets in the beaten egg, press them in bread powder and put them into the frying pan.
<li>Once they get fried enough take these keema potato cutlets into a separate plate and serve them hot with tomato sauce or pudina chutney.

<li>Take a pan and heat oil in it. Add mustard seed and fry them until they splutter. Now add the sliced onion pieces, ginger, and green chillies to it and fry the mixture.
<li>Now add the cooked mutton to this mixture and cook it, till it gets roasted.
<li>Now add pepper powder and gram masala powder to this mixture and mix it well.
<li>Fry it well for next 2 minutes, while stirring it continuously.
<li>Take it into a plate and garnish it with curry leaves.

<h3>Method For Preparing Daal Gosht</h3>
<ol>
<li>Take pressure cooker and boil mutton pieces with salt, daal, and 2 tbsp of oil. Boil till the dal gets soft and keep it aside.
<li>Meanwhile take a non-stick kadai and add 2 tbsp of oil in it.
<li>Add sliced onions to it and fry until they get into golden brown color.
<li>Next add ginger garlic paste and fry this mixture for a minute
<li>Next add the coriander, cumin, turmeric, red chili and garam masala powder. Fry this mixture until the oil gets separated from the masala.
<li>Now add the boiled daal-meat to this mixture and mix it well.
<li>Once the mixture gets boiled, cook it for another 10 minutes on a low flame.
<li>Now take off from the fire, add lime juice, stir well and garnish with coriander leaves.
<li>Now your Daal Gosht is ready.
